Ayam Cemani is an unusual and relatively modern type of chicken found in Indonesia. Ayam means cock in Indonesian. Cemani is the birthplace of these chickens on the island of Java.
They have a powerful gene called EDN3, which causes darkening, and all cells in the body release this gene. So the cock’s feathers, beak, eyes, skin, all internal organs, and bones turn black. Only the blood takes on an ordinary color.
A similar breed of chicken, Kadaknath, is found among the poor and indigenous peoples of central India and Rajasthan. They are considered sacred animals. This meat is expensive.
